BRAND STORY
The titular Edelmeister (from the German for “noble master”) who you can see on our labels is Sigmund Koeppler.
A brewer born in a golden age of change and reawakening, sometime between the proclamation of the German beer purity laws, the Reinheitsgebot, and the discoveries of Columbus, Koeppler was fascinated by the world and people around him.
His extensive travels led him to create recipes for session beers so that he could share with others what was best in beer, as befits a true humanist.
And though his life story may be entirely fictional, there’s no doubt that it could have happened, and the best proof of that is the Edelmeister brand.
Lagers
Lager is a whole family of exciting variations that you can find in Edelmeisters brand portfolio. Try our: Pilsener, Radlers, Schwarzbier, Unfiltered, Dealcoholised and Strong European Lager.
Lagers are the bottom-fermented beers. In the process of bottom fermentation, the temperatures are lower than in the case of top-fermented beers. Bottom-fermented beers usually have a cleaner flavour and aroma profile.
Popular light lagers, like pilsener, are refreshing and, depending on few factors, rather durable. Typically, bottom-fermented beers are less engaging, a bit simpler, but not “worse” nonetheless.
A lot of them are award-winning classics. It’s hard to describe the Baltic porter, for example, as a boring beer.
Interestingly, lager yeast collects at the bottom of the tank during fermentation. As it requires temperatures from 8°C to 15°C.
Thanks to the low temperatures, there are fewer by-products, like higher alcohols and esters, giving us a cleaner profile. Bottom fermentation is a much calmer process, not that dynamic or impressive at the beginning.
Ales

Ales is the name for the top-fermented beers, with a much more complex taste and aroma than lagers. The required temperature for top-fermented beers is from 16°C to 24°C.
Top-fermentation yeast (Saccharomyces cerevisiae) in the early stages collects by the surface of the forming beer, the wort, to fall to the bottom by the end of the process.
The temperature and type of yeast make the fermentation quite intensive during the first days – the so-called primary fermentation. There’re a lot of volatile compounds, including esters created as a result of the acid’s impact on alcohol.
They are produced in different parts of the world. Recently the most popular of the family is, without a doubt, American pale ale (APA) and (American) India pale ale (IPA). American pale ale is characterized by a moderate to strong aroma of new-wave hops from the USA, New Zealand, Australia, Japan, or Europe: Slovakia, Germany, and Poland.
The dominating notes are citrus, tropical, white fruits (white grape or lychee), resinous, herbal, floral, or slight petrol notes.
